GRAPE HARVEST
It begins when the maturation of the grapes provides the right balance between sugar concentration and acidity. In addition, we evaluate the phenolic maturity (colour) and aroma (bouquet). The grapes are harvested in 20 kg small boxes and carefully sorted manually on a conveyor belt.

VINIFICATION
A short maceration and accurate enological practices bring out the varietal aromas of the grape.The alcoholic fermentation (AF) is followed by the malolactic fermentation (MLF). The wine is kept in oak barrels at controlled temperature, culminating in a further period of aging in bottle.

Small pearls from the territory

One of our challenges is to enhance the native varieties of the hills of Novara. In the past, Vespolina, Uva Rara and Croatina were used mainly as a supplement to Nebbiolo in making the great red wines, while nowadays they’re vinified in purity and reveal, singularly, very interesting peculiarities.
