Rare grape: also known as Bonarda; in the vineyard it can be recognized for its sparse cluster. On the Novara Hills it finds an ideal microclimate environment, typical of the area that influences and characterizes this variety.

GRAPE HARVEST
In mid-September, when the grapes have reached the correct maturity. Harvested in little boxes of hand-selected grapes from the conveyor belt, according to our specifications.

VINIFICATION
the vinification technique involves soft pressing, short maceration at changeable temperature; so the extraction and the release of natural and varietal compounds of the Uva Rara are facilitated.

Small pearls from the territory

One of our challenges is to enhance the native varieties of the hills of Novara. In the past, Vespolina, Uva Rara and Croatina were used mainly as a supplement to Nebbiolo in making the great red wines, while nowadays they’re vinified in purity and reveal, singularly, very interesting peculiarities.
