GRAPE HARVEST
It begins when the maturation of the grapes provides the right balance between sugar concentration and acidity. In addition, we evaluate the phenolic maturity (colour) and aroma (bouquet). The grapes are harvested in 20 kg small boxes and carefully sorted manually on a conveyor belt.

VINIFICATION
A group of control techniques maceration, temperature, oxygen) facilitates the extraction
of the typical varietal aroma, colour and noble tannins, them allowing to reach an optimal characterization of the organoleptic complexity.

AGEING
To ensure great harmony and finesse, aged in oak barrels followed by a further bottle ageing for a total period of at least 3 years.
